But one question comes up ... is it possible to record just one show? Every time I press record, the only option is to record "all" or "new" of the series. I have not seen the option to record only 1 show.

What you can do is to sign up for Cloud DVR and with that replace the DVR box. If you get the Cloud50 you can record 50 shows at once and keep the 50 shows for 6 months.
