Stitcher is predominately thrusting whereas epee has some slashing in it's moveset. That's about it as far as I know. Personally I prefer the stitcher for looks and moveset. Looking at it in the wiki, the stitcher has slightly higher base damage so one would assume that it gets stronger than the great épée in the long run.
For fun and good roll catching i sugest giant hunt the angle/lag sometimes makes it not hit, but if they spam roll after getting hit you can catch them very consistently ... so you can have a sacred godskin peeler with giant hunt with no drawbacks even though giant hunt is inherently heavy as long as you have the whetblade for holy infusion ...
