Did Vah Ruta first, had 3 Hearts and 1 Stamina boost. The only thing that saved me were two Cooked Big Radishes, that added 5 hearts, but those were gone as soon as I was hit. So yeah, you can do it with three hearts, just prepare the appropriate meals, and have a s***load of arrows.
