You can get away with 33's without re-gearing, especially since you have a 351. If you are already planning to re-gear, just decide how big you want to be and plan from there. 35 and 6" lift is a commitment, 33 and 4" lift is more daily-doable, IMHO. It's going to have more of a leveling effect than the 2.5" lift. 32's will fit just fine, I went 33's on mine. Don't forget to get an alignment afterwards. Will run about $150-$200 to have it done.
